A hands-on guide

Learn to cook — for real.

Not a stack of recipes. This guide builds the mental model behind good cooking, one concept at a time — heat, salt, flavor, browning, doneness — then lets you play with each idea. Master the handful of principles here and you can cook almost anything without a recipe, and fix it when it goes sideways.

How to use this guide

Read in order if you're new — each chapter assumes the last. The interactive widgets are the point: drag the sliders, push the numbers to silly extremes, watch what happens. You'll learn more in five minutes of fiddling than five pages of prose. Everything runs locally in your browser; nothing to install.

Part I · Foundations

A note on the numbers

Temperatures, times, weights and percentages here are typical teaching values. Real food varies by thickness, moisture and starting temperature — and every stove, pan and oven runs differently. Treat the guide as a map; your own senses and a thermometer are the territory.
