Doneness & resting

"Done" isn't a color or a time — it's an internal temperature. Proteins change texture at specific, predictable temperatures, and once you cook to the number instead of guessing, overcooked meat mostly disappears from your kitchen. A cheap instant-read thermometer is the single most useful tool you can own.

Doneness is a temperature

As meat heats, its proteins firm up and its water gets squeezed out in stages. That's why a steak goes from soft and translucent (rare) to firm and grey (well-done) as the core climbs just a few tens of degrees. Each stage corresponds to a temperature band — hit the band you want and pull it there.

Doneness vs safety — two different questions

Texture is one axis; food safety is another. Harmful microbes are killed by a combination of temperature and time, so the safe target depends on the food:

  • Whole-muscle red meat (steaks, chops) is essentially sterile inside; the surface is seared, so the center can safely be rare. Cook to taste.
  • Poultry needs to reach a safe core — around 74 °C for an instant kill, or a held lower temperature over time. Don't serve pink chicken on a guess.
  • Ground meat & sausages have surface bacteria mixed throughout, so they need a higher, thorough cook (~71 °C) — a rare burger is a real, if managed, risk.
  • Fish is usually done, texturally, around 50–55 °C, and is often eaten raw; cook to the texture you like.

Measure the center, away from bone.

Push the probe into the thickest part, not touching bone or the pan — bone and metal read hotter and will fool you. The coolest interior point is what determines both doneness and safety.

Carryover: it keeps cooking after you pull it

Here's the part beginners miss. When you take food off the heat, the hot outer layers keep driving heat inward. The core temperature continues to climb — typically 3–6 °C for a steak, and more for a big roast — before it peaks and falls. This is carryover cooking, and it's why you must pull food before it reaches the target, not when it gets there.

Aim a few degrees low and let carryover finish the job. A steak destined for 55 °C medium-rare should come off the heat around 50–51 °C. A roast, with more mass, might need pulling 5–7 °C early. Forget carryover and you'll consistently overshoot.

Why you rest meat

Resting — letting cooked meat sit a few minutes before cutting — does two things. First, carryover finishes evening out the temperature, so the steak is cooked more uniformly edge to center. Second, and more debated, it lets the meat relax: cutting straight off the heat spills more juice onto the board, while a short rest lets things settle so more juice stays in the meat where you want it.

A rough guide: a few minutes for a steak or chop, 10–20 minutes for a roast or whole bird. Tent loosely with foil if you're worried about it cooling — but don't wrap it tightly, or the crust you worked for will steam and go soft.
