The cooking simulator
Time to drive. This is a simplified but honest model of searing a steak in a pan: heat flows from the pan into the surface, the surface browns once it's hot and dry, and the heat works its way to the core. Your two jobs from chapter 1 are both here — manage the heat and stop at the right moment — and they're in tension.
What you're balancing
A great sear is a race. You want the surface to spend time in the 150–190 °C browning band to build a crust — but all that time, heat is marching inward and cooking the core. Too little heat and you'll cook the inside to grey before any crust forms. Too much and you'll burn the surface before the center is ready. The art is finding heat and timing that give you a deep crust and a juicy medium-rare center — then pulling early so carryover lands you on target.
Set the burner level and let the pan preheat. Drop the steak, and flip whenever you like — flipping moves the hot side away from the pan to even out the cook. Watch the two curves: surface temp and core temp. When the core nears your target, hit Pull — then watch carryover finish the job during the rest. The widget scores your crust against your doneness at the end.
Things to try
- Low heat the whole way. Notice the crust never really develops — the surface can't reach browning temperature — and the core creeps up grey. This is the "pale and overcooked" failure, and it's the most common one at home.
- Max heat, no preheat, never flip. One face burns while the other stays raw. The lesson: preheat matters, and flipping evens things out.
- Flip often vs flip once. Frequent flipping actually cooks the inside more evenly and can build crust just fine — try both and compare your scores.
- Pull "on target" vs pull early. Pull exactly at 55 °C and watch carryover push it to medium. Pull at 50–51 °C and it settles right at medium-rare. That's carryover made real.

From the screen to the stove
A model is a map, not the territory — your real steak has a thickness, a starting temperature, a specific pan and a specific stove, and you'll read it with your ears, eyes and nose as much as a thermometer. But the relationships are true: dry, hot surfaces brown; heat takes time to reach the center; food keeps cooking after it leaves the pan. Internalize those and you're cooking, not just following.
