Emulsions & sauces

A sauce is how you bring the five tastes and a little fat together in liquid form. Many of the best ones are emulsions — fat and water coaxed into a single creamy mixture even though they'd rather separate. Understand the one trick that holds them together and vinaigrette, mayonnaise, pan sauce and hollandaise all become the same idea.

The problem: oil and water don't mix

Pour oil into vinegar and it beads up and floats. Fat and water repel each other. An emulsion is a temporary truce: millions of tiny droplets of one dispersed and suspended throughout the other, so the mixture looks and feels like a single creamy thing. Whisked vinaigrette, mayonnaise, cream, butter and many pan sauces are all emulsions of fat and water.

The fix: emulsifiers and droplet size

Two things keep an emulsion from separating:

  • Small droplets. Vigorous whisking, blending or shaking breaks the fat into tiny droplets. The smaller they are, the slower they find each other and merge — so the longer the emulsion holds. A hard-shaken vinaigrette stays mixed for minutes; a gently stirred one splits almost at once.
  • An emulsifier. A go-between molecule that grabs water on one end and fat on the other, coating each droplet so they can't coalesce. Egg yolk (its lecithin) is the classic — it's why mayonnaise, made of mostly oil, stays a stable cream. Mustard, honey, garlic paste and even a spoonful of the starchy pasta water all emulsify to some degree.

Add a little mustard to a vinaigrette before whisking in the oil and it emulsifies far more easily and holds far longer. It's the cheapest insurance in sauce-making — and a clue to how powerful even a small amount of emulsifier is.

Three sauces, one idea

The same principle scales from a 30-second dressing to a classic:

  • Vinaigrette — roughly 3 parts oil to 1 part acid, a little mustard, salt. Whisk or shake hard. The mustard and the small droplets hold it together long enough to dress the salad; it'll slowly separate, so re-shake before serving. The 3:1 ratio is a starting point, not a rule — taste and adjust.
  • Mayonnaise — egg yolk + a little acid, then oil whisked in slowly, drop by drop at first. The yolk's lecithin lets it hold a huge amount of oil as a thick, permanent emulsion. Add the oil too fast and it breaks — the cure is to start over with a fresh yolk and whisk the broken mixture back in gradually.
  • Pan sauce — the payoff from browning. Deglaze the fond with wine or stock, reduce, then swirl in cold butter off the heat (monter au beurre). The butter emulsifies into the liquid for a glossy sauce built entirely from what was stuck to your pan.

Why emulsions break — and how to fix them

A broken emulsion is one that's separated back into greasy fat and watery liquid. The usual culprits:

  • Too much fat, too fast for the emulsifier and water to handle. Add oil gradually, especially at the start.
  • Too little water or emulsifier relative to the fat. Sometimes a few drops of water or another yolk is all it takes to bring it back.
  • Too much heat. Egg-based sauces like hollandaise scramble and split if they get too hot. Keep them gentle.

The rescue is usually the same: start fresh with a little water or a new yolk and whisk the broken sauce into it slowly, rebuilding the emulsion droplet by droplet.

Whether it's a shaken vinaigrette or a careful mayonnaise, you're always doing the same thing: breaking fat into tiny droplets and giving them a chaperone so they can't recombine. Go slow and it holds; rush the fat and it breaks.
