Browning
The seared crust on a steak, the golden edge of toast, the deep color of roasted onions, the top of a loaf of bread — that brown is not just color. It's hundreds of new flavor and aroma compounds that didn't exist in the raw ingredient, created by heat. Browning is where cooking adds flavor instead of just rearranging it.
Two reactions, one goal
Two different chemical processes produce the browning we love, often side by side:
- The Maillard reaction — amino acids (proteins) reacting with sugars under heat. It kicks off meaningfully around 140–165 °C and produces savory, roasted, meaty, toasty aromas. This is the crust on seared meat, the color of bread, the flavor of roasted coffee and chocolate. It's the heavyweight of cooked flavor.
- Caramelization — sugars breaking down on their own, with no protein needed. It begins higher, around 160–170 °C+ (depending on the sugar), and gives sweet, nutty, toffee, bittersweet notes. It's what happens to a caramelizing onion, a brûlée top, or melting sugar.
The one number to remember: meaningful browning starts around 140 °C, and water can't get hotter than 100 °C. So a wet surface cannot brown. That single fact, from chapter 2, is the master key to the entire crust game.
The temperature ladder
Picture the surface of your food climbing a ladder of temperatures. Below 100 °C it's just drying and warming. Cross 100 °C — once the surface is actually dry — and it starts to climb fast. Hit the 140s and Maillard ignites. Past ~170 caramelization joins in. Push past ~200 and you tip from "deeply browned" into burnt and bitter. The whole craft of getting a great crust is parking the surface in that productive 150–190 °C band long enough to develop color, without scorching.
How to actually get a good crust
Everything that helps browning is really about getting the surface dry and hot, fast:
- Pat it dry. Surface moisture has to boil off before the surface can climb past 100 °C. A wet steak steams; a blotted-dry steak sears. Even salting ahead and letting the surface dry in the fridge helps.
- Get the pan hot before the food goes in. A cool pan lets juices pool and the food simmers in its own liquid instead of searing.
- Don't crowd the pan. Pack it full and all that released moisture can't escape — the temperature drops below the boiling ceiling and everything steams, grey and sad. Cook in batches with space between pieces.
- Use enough heat, and a little fat. Fat fills the microscopic gaps between food and metal, spreading conduction evenly so you don't get a few scorched spots and a lot of pale ones.
- Leave it alone. Browning takes contact time. Flipping constantly never lets any one spot reach crust temperature. Let it sit until it releases cleanly.
Fond: the brown stuff is treasure
Those browned bits stuck to the pan after searing have a French name — fond — and they're concentrated umami and Maillard flavor. Don't scrub them away. Add a splash of liquid (wine, stock, even water), scrape them loose as it bubbles — that's deglazing — and you've got the backbone of a pan sauce in thirty seconds. Browning pays you twice: once on the food, once in the pan.
If your food browns poorly, you almost certainly had water in the way (wet food, crowded pan) or not enough heat. Fix those before anything else.
